#Mumlife // Countdown $50 family meal challenge - Cooking at the Coles!

Family meal ideas under $50

Hey mamacitas!

I hope you have all had a beautiful Monday. If your sitting down reading this at the end of the day well done on surviving another day in mum mode. If no one has told you already then let me- you've been a great mum today!

Countdown is our go to. We've long been countdown shoppers and so when they approached me and gave me the challenge to create my favourite family meal with mainly their price lock down products for under $50 I got pretty excited.

I decided to make a bacon and egg pie with Italian pasta salad. There were a few reasons I decided to make this but mainly because it is filling, a total comfort food for these cold winter days and there is always left overs. You gotta watch your portion sizes I know but this isn't one of those meals (call it a cheat meal but its still semi healthy).

So we set off to countdown northland's which is where we have been for years. Me and my partner also shopped there pre kids so its legit been YEARS. We made this salad a lot over summer and it was always made using homebrand Italian dressing. Unfortunately it was no where to be seen! I actually couldn't see any home brand dressings so we settled for ETA. Still, ETA is price locked down every day so it wasn't that expensive.

So we grabbed our ingredients and headed to the check out. With a $50 budget we spent $40.65 - yaaas!

So out of everything we brought 90% was home brand and in the lock down range. Even our celery was "countdown" celery. Our chorizo, capsicum and eggs weren't lockdown because let's me honest - countdown doesn't have animals or a vege garden but you never know what the future holds.

Anyway this was pretty easy to whip up and I managed to shop and make dinner and have it ready in the space of three hours.

To make the most of your time bring a pot of salted boiling water to the boil while your prepping your bacon and egg pie. That way once the pie is cooking you can easily make up your salad.

This meal is perfect to also whip up on a crusaders game day if your off to the game or hubby is having some friends over. We all know the way to a mans heart is through his stomach. There will also be plenty of leftovers for lunches the next day.

* This meal is toddler approved. I found him in the fridge with his fingers in the salad bowl! This is also a great opportunity to hide veges in your bacon and egg pie if your child is a little picky.

Id love to hear if you make this at home! Its pretty easy and delicious. Thank you to Countdown who supplied me with $50 to get the ingredients needed to make this for my family.

Whats your go to family meal?

Lipstick and love! x
